Tactics are to put the banner bearer and damsel in unit of knights each and then have the paladin general flying about, charector killing. The damsel is mainly for her dispel rolls but also to cause some havoc with the lore of beasts.
Knights charge forward with fire support form the bowmen, and the 20 men at arms either defending the bowmen, or engage the enemy from the front so the knights can take their flanks

How exactly does you general plan on char killing? Its sound in theory but most characters are in a unit and whilst you general may indeed kill the char, he will almost always lose combat. Also there are a lot of problems you need to consider, for example banners giving always strikes first, armour negates charges and spells which switch stats.

The better Bret generals i have seen aim to large creature hunt. Some sword or something gives them a good bonus i think.

ok maybe not charector killing but maybe just flying around near the back. I bought something that makes him hate missile troops so i'll have him hunt them

"but maybe just flying around near the back."?

If this is your lord then "just flying around near the back" is a bit of a waste. If you can give him a small unit of pegasis knights to go with that will protect him really well. Once your behind people you can split off and chage units.

Remember that against all undead and deamons and stuborn units your lord is unlikely to break them in combat and will get bogged down and then killed.

Warmachine hunting might be a safe choice for him but remember that a cannonball to the face will destroy him. Basically make very good use of cover and he should be alright.

how about keeping him roughly near the rest of the army (they can use his leadership) and then if theres a nasty bolt thrower around he can go and take it out

So long as you can keep him out of los your fine. Just beware of hills etc.
