How viable is a Kroot army?
I've heard that its possible.... But will a Kroot only army actually win me any battles, or will it be sat on my shelf for me to look at?
I know that there are several unofficial codexes out for them, and some actually look good and reasonably balanced, but can I stick with Kroot (with several conversions) as it's own force? They look too awesome to be a "helper" unit for the tau.

Kroot army? If your using Kroot merc list I dont know it well enough to judge but if your using tau then no. Its not legal as you MUST have a battlesuit commander and kroot themselves cant actually pop vehicles. Whislt they can be cool units and be actually quite good its not going to be the next thunderwolf list or Leafblower.
Its like Typhoon landspeeder lists, the unit itself is cool but the more you take of them the less competative the list actually is.
On the flip side it would be a cool list to create especially if you converted a crisis leader into some sort of kroot in a suit.

How do you mean 'viable'? If you mean competitive, not at all, unless you're competing at a Rogue Trader and have permission from the event coordinator. If you just mean playable and survivable, an all Kroot force can work pretty well.

Here's what I'm going to be using, the guys at my local GW are saying it could work and would look pretty cool, and I'm always one for a challenge.
My question is however, when I get my carnivores, should I get the hounds and crootox with it, or should I wait 'til the launch of the new tau to see if they'll change from metal? (I can have them play part of my tau while I wait)

I remember someone coming up with the idea of using the dark eldar list but representing models using Kroot to make an all Kroot army. I don't have the DE codex myself but I know they said something about using pain tokens to represent them gaining from eating their opponents, and that haemonculi were a good statline representation for shapers to share out into squads? And other such details.
This could create you a decent army if it works well, and as long as it's very clear what each model is representing you shouldn't have much trouble getting games.

If you like the idea of it make a kroot army even if it is used in apolcolypse.i wouldnt even worry about how good it would do.I have a witch hunter army that has arbites with shotguns.it would get destroyed but i made it because i liked the idea of it.I also have several other armies though incase i actually want to try and win
